Soooooooooooo. Have you watched this lovely documentary on Netflix called “What The Health”? No? Good. Don’t. Unless, you’re ok with making lifestyle changes. And if you have watched it, and didn’t get remotely spooked, then you’ll have no idea where I’m coming from. It’s been relatively controversial, and I’m not one to fall into a fad or anything, but substantial data and decent logic, will make me question things for sure. I won’t go into deets, but this documentary basically conveys the message that meat isn’t good for you. Now, I’m a pretty big omnivore. I love my leafy greens and veggies, but am a huge fan of a good steak/fish/goat/lamb/mussels/etc. I love it all…. But the data was a little too convincing. So convincing, that I’m trying that vegan life for a little while to see if I can actually see a difference in my health. 

These past few days, all my meals have been vegan. I specifically even bought condiments and switched out lots of dairy products to make sure I was sticking to being vegan. It hasn’t been easy, but I don’t miss the meat and everything tastes amazing! So, I can’t really complain….yet. And yes, the hubs is on board for the most part. If he’s eating at home, he’ll eat whatever I make because his theory is “if you’re (me) doing something that is benefitting our bodies, I can’t really complain!”. I love him for that btw!

It’s summer. I know know it, and it can be dreadful some days. It basically means that we need quick meals and snacks to last these long days because after watching yet another episode of Dora the Explorer, doing 80 crafts, hitting the splash pads, and lots of “mama play with me!!”, I’m basically drained and can’t even think of making a giant meal for everyone! So I had to think of things I could whip up super fast to get something in those grumbling tummies!

Easter is just around the corner which means a giant feast is in the near future!! My kids love ham so when CUREMASTER RESERVE reached out to try one of their amazing hams, I was game!! =)

We loved this ham quite a bit and it was truly amazing! It’s not everyday that you get to eat a ham that is hand-crafted and hardwood smoked with pecan chips, like this Vermont Maple Ham! YUM!!

This chicken dish is bomb diggity. I couldn’t really call it anything specific, so I hedged my bets, and called it Asian Chicken. Clever, I know. =)

I think one of our favorite cuisines is Asian. I know that’s pretty wide-ranged but we like it all. Korean, Thai, Vietnamese, Chinese, etc. Seriously, we will eat it all. All nights of the week if given the option. No kidding guys. Those are the leftovers that definitely go first! 

This chicken somehow made it to that list! Whenever I make this, the leftovers disappear very quickly! Oh, and my kids gobbled it up too, so ya know how much of a winner that is if you have kids that are picky!! Winner winner chicken dinner!!!  View Post

So I’ve been on this healthy eating kick recently. It hell as ain’t easy because when it hits 10 PM, all I can think about is how I want to down a some chips with some guac or queso while I watch my guilty pleasures of Teen Mom or Real Housewives of OC. Who’s with me? Don’t tell me you don’t watch crap tv and crave junk…Are you really sitting around eating cucumbers? If you are, please don’t tell me… 

So while kicking nighttime cravings has been supa tough, being able to eat healthy for my meals during the day has gotten easier! I do some prep work a couple of days, and with the help of these awesome heat and eat containers, it’s made being healthy so simple for me!
