I need the easiest recipes in my life that are relatively clean, and when I finally figure out something that can feed all of us, it feels like the biggest win. I picked a bunch of stuff out of my refrigerator one Sunday afternoon when everyone was bugging me about what we were eating for lunch, and I think this came together in about 10-15 minutes. It made leftovers so I was even able to take it to work and make sandwiches for the kids the following day!
It’s creamy, it’s delicious, and my kids ate it. I don’t think I need any more validation than that!
Curried Chicken Salad:
- 4 cups of chopped/shredded rotisserie chicken
- 1/2 cup of mayo ( I like this one!)
- 2 tbsp of mustard (I like this one!)
- 2 stalks of celery, diced
- 1/4 cup cranberries
- 1 avocado. de-seeded and cubed
- 2 tsp of curry powder
- salt to taste
Directions:
Add all the ingredients in a bowl and mix really well together! Serve it on a bed of spinach, in a sandwich/wrap, on top of romaine lettuce leaves, or just by itself!
