3 Simple Recipes with Pimiento Cheese!!

It’s summer. I know it..you know it, and it can be dreadful some days. It basically means that we need quick meals and snacks to last these long days because after watching yet another episode of Dora the Explorer, doing 80 crafts, hitting the splash pads, and lots of “mama play with me!!”, I’m basically drained and can’t even think of making a giant meal for everyone! So I had to think of things I could whip up super fast to get something in those grumbling tummies!

Turns out, Price*s Pimiento Cheese is the perfect ingredient in a bunch of different snacks and recipes!! Here are three that will satisfy any craving!

Pimiento Grilled Cheese

A quick crowd pleaser no matter who or what time of day. Grilled cheeses are the ultimate comfort food and this takes your boring regular grilled cheese, and gives it a little somethin’ somethin’. 

Ingredients:

Heat a skillet on medium to high. Butter two slices of bread on the inside, and spread on some of the pimiento cheese. Close the sandwich, and put butter on the outsides and place in the skillet. Flip after 4-5 minutes and cook for another 3-4 minutes until the cheese is melted and outside of the bread is a little crispy! Enjoy with a bowl of soup to make it a whole meal! 

Pimiento Mac n’ Cheese

Ingredients:

Directions:

Preheat oven to 350. Boil some water, and cook pasta according to pasta directions. After pasta is done cooking, drain and place in oven safe dish. Add about a cup of pimiento cheese into the pasta and make sure it’s well mixed together. Top with however much panko you’d like. I like to do about a 1/4 a cup if I had to eyeball it. Cover with foil and bake for about 20 minutes. Turn on broiler, uncover, and broil on high for about 3-4 minutes. All that panko will crisp up and make a lovely crust on that mac n’ cheese!! 

Spicy Jalapeno Pimiento Cheese Muffins

Ok, so I’m with you. This isn’t a meal but makes for some super yummy snacks or a simple side to go along with a dish! They are soft, fluffy, and have just the right amount of spice! 

Ingredients:

Directions:

Preheat oven to 425. Spray a mini muffin pan with cooking spray and put to the side. Combine all the ingredients together and start spooning them into the muffin pan. If it’s too thick, add a little bit more buttermilk to get the right consistency. Bake for about 10-12 minutes and voila! Yummy, delicious muffins!
