4 Real Breakfasts for Busy Moms!

I’m not the biggest fan of resolutions. Trying to stick to something your mind made up at the beginning of a 365 day period, and then following through on day 365 is definitely not easy. Unless your resolution is like, to eat chocolate every day… Because let’s be real… We can all do that one… #amirightoramiright

One of my biggest challenges is to eat breakfast. Sounds silly doesn’t it?  I know, I know you’re nodding your head yes…but hear me out..

With two kids grabbing at my shirt, and climbing up my legs begging me for waffles, pancakes, cheerios, fruit snacks, and all their toys at 7 AM, it gets hard to focus on that I need to eat something. But I know that it is super important since I’m basically up from dawn til’ way past dusk, meaning that initial meal is pretty important! That cup of reheated coffee is the only thing in my belly, and that is definitely not enough food for the amount of stuff I need to do during the day! I know the days I do actually eat breakfast, I have so much more energy, more patience with the kiddos (and don’t actually cave for those darn fruit snacks!), and generally happier! So I kinda, sorta wanted to make it a resolution to try and eat breakfast on the daily! I knew if I wanted to be successful and see it through, it needed to be easy and healthy so I came up with a few options that I could rotate throughout the week, along with just a bowl of cereal and milk! 

Yogurt And Cereal Layered Parfait

This literally takes seconds to assemble! I start with a little bit of strawberry yogurt on the bottom of the glass, and then add some cereal, and then just continue to layer! I sometimes like to add fruit at the top, or sometimes it’s just good on it’s own!

Avocado Toast with Fried Egg

This couldn’t be more simple! I basically toast a piece of whole grain toast, spread fresh avocado on top, fry an egg, and put it on top! Instead of salt, I add some chili pepper flakes to give it some spice, and it tastes amazing! I also sometimes eat it with a bit of sriracha. I mean, look out guys. That’s a whole lotta flavor that not to be denied!! HAHA. 

Fruit, Honey, Yogurt, & Cereal Bowl

Start with some plain, nonfat yogurt down the middle of your bowl. Add in cereal like this Great Grains Raisins, Dates, and Pecans on one side, and down the other side add some fruit! I love berries and so do my kids, so I added in some blueberries and sliced strawberries! Drizzle a little honey down the middle and it is absolutely delicious and so nourishing! Blended Smoothie

This is by far one of my favorite breakfasts!! My kids will drink this too, so if I just make a big enough batch, we all end up having it for breakfast, including the hubs too! 

I know what you’re thinking. It’s got spinach and it’s green. But trust me, it’s delicious!! You can’t even tell there is spinach in it! The best thing about spinach is that it has zero taste, so it always just ends up coloring our smoothie green and making it full of nutrients, but adds no taste value! Perfect for picky kids!

Blend these ingredients in a blender, and you’re set!

  • Handful of spinach
  • A few strawberries (I do about 3 if it’s just for me, but more if I’m making for everyone!)
  • A few blueberries
  • 1 diced mango (I’ll do two mangoes if I’m making for everyone!) 
  • 1 banana (I’ll do two bananas if I’m making for everyone!)
  • 1% Milk (or skim) dependent on your preference of consistency (I like to be able to sip mine through a straw, so I like it a little bit more liquidy than thick and so do my kids, so add milk as you go along)

 So what do you think? These all take about 5-6 minutes to put together! It doesn’t get any faster than that for a good breakfast! I’ve been waking up earlier as well to make sure to get some food into my system prior to getting the kids, so I’m more full while tending to them! Plus, I can just sip my coffee while they eat breakfast! Or try to… *sigh*

    The avocado and fried egg on toast. I have seen this several places and it has always intrigued me. I am not sure I like avocados because the only thing Ive had them in is guac. But maybe it’s time to take the leap and try it. It sure looks hearty and yummy!!
