Is anyone still in Thanksgiving holiday mode, and is taking some time to come out of their turkey coma so to speak?? I’m having a rough Monday for sure over here! I just want to lounge, be lazy, eat, and drink hot chocolate all day in my PJs!
We had a very chilled out Thanksgiving because my family couldn’t come, and we didn’t go to our in-laws this year so it was just the four of us at home. And I thought it was going to be not as exciting, but it was like we had one long week that was just all Saturdays, which is obviously a great feeling! We got to just hang out around the house, watch movies, eat, and snuggle with just us!!
I only had to make a meal for the four of us, which was way simpler! Oh yea, and a lot less dishes!!! *AMEN*
We aren’t the biggest fans of turkey, so we always make cornish game hens, or chicken, or something fun. This year, I decided I was going to attempt a rack of lamb for us and it was AH-mazing!! It was a lot easier than I imagined and turned out to be super delicious!
Our entire menu was pretty simple! All of it was made by yours truly, and it didn’t require me to be in the kitchen all day long!

- Oven roasted potatoes
- Sautéed Mushrooms
- Roasted Brussel Sprouts Tossed in Sriracha Sauce
- Homemade Hatch Chile Apple Pie
- Rolls
We also accomplished two major tasks during the week: (1) Christmas decor and (2) Potty training Aria. WOOOHOOOOOO to both of those!! Our kids were so excited to have the house lit up, and I’m not going to lie, I kinda love it too! Ok, I super am obsessed. HA.
And as for Aria, she mostly gets it so I’m pretty excited that she caught on relatively quickly!!
Now back to reality for a few weeks, before Christmas break is here and we get to chill and hang with family again!! We only have three weekends left before Christmas weekend!! It’s sneakin’ up on us fast!!
