Triple Ruby Relish

It’s been hectic around here. The hubs has been uber busy with work, school just ended for Aria, and our sweet baby boy turned one! I don’t think I’ve slept in days. I wake up early and work late into the night. The hustle is real guys.

 I know they tell mothers that it will go fast, but it really is an understatement. I feel as if though I am going from weekend to weekend and everything in between is just blurs. Target trips, grocery store runs, and making snacks for the kids is all I do. Well, that’s what it feels like. 

 Time is somehow just passing us by and it’s already summer. Sometimes it saddens me that it’s going as fast as it is. Life is moving so quickly and I fear that I’m going to blink and I’m going to be talking about my kids going to college or something. #dramaticmuch 

But you know what I mean, especially if you’re a parent. I know you feel me. 

So I slowed down one afternoon, and came up with a fun relish to eat with meals. 

With strawberry season still looming around us, it only made sense that to use some of those amazing berries and try to come up with more way to get them into our bellies! This took minutes to prepare and tastes delicious with anything. Serve it up at a party as a fruit salsa, serve it alongside fish or chicken, or just devour it on its own! 

Ingredients:

12 oz. strawberries, chopped

5 radishes, cut into strips

1/3 cup of chopped watermelon

2 tbsp. of fresh mint, chopped

Directions:

In a large bowl, combine all the ingredients without the mint and let stand for about 10 minutes. Toss with mint and serve immediately. Makes about 2.5 cups.

    Interesting mix of flavours! I would never have thought of adding radishes to this mix but it would definitely give it that kick. Yum! Thanks for sharing with the Wednesday Showcase! (I'm hoping time slows down for you and your babies!)
